Building the Bridge


Feuille Next: Observance is rather complicated. Simply having tables, chairs and cutleries that make up the usual dining basics is just not enough. I have this motto that I will not be doing what others can easily achieve or imitate at Feuille Food Lab—both the dishes and the dining methods that take place at Feuille Food Lab have to be original and have not been attempted before. I figured that I wanted to bring in more elements, that are crucial for the whole sensory experience, which I hadn't been able to do for Feuille Next into Observance event and possibly challenge myself for more. Vegetations and plants are a significant factor which will articulate, define, and redefine this particular tasting event.

Plants should not be passive only as the green decors in the background but actively contribute and convey silent messages for its purpose and hidden treasures, especially for those who are keen observers. The ratio of the plants to the space ought to dramatically increase, though not randomly, albeit with strategic implementation at key locations and seamlessly blend into the environment for the adopted dining theme.

Part of the difficulty is to create a scene that's concurrent with the theme on an abstract level—that's not too visual or we risk turning the whole studio into a horticultural greenhouse or we give away too many visual cues that prevent our guests from imagining their own stories and linking their past memories.
