我們將在2018年將舉辦pop-up活動,以現代烹飪技術為自然風菜餚注入活潑的生命。
概念上與傳統差異極大,不僅為顧客提供新穎的餐食,也為廚師們提供一個充滿想法,有養分、有美學的環境,創造一起成長的機會。
此次將引入特殊的服務風格,客人將來到廚房,看見他們的餐食是如何誕生,因為餐飲不僅僅是烹飪和提供菜餚,也將是我們拉近與客人之間距離的方法。

ABOUT FEUILLE FOOD LAB 

We are starting a pop-up TASTING EVENT at our studio for 2018, featuring modern cooking techniques for our nature inspired dishes. Our concept on running the studio and our featured dishes vary greatly from the traditional restaurants. Not only would we be cooking for our customers, but also providing a conscious and nurturing environment and opportunities for our chefs to grow and enrich personally and professionally. Our key chefs will have the chance to get involved with planting and looking after our own produce and have a chance to collaboratively develop the dishes to serve at the studio and at the same time, take a leadership position to teach and educate their fellow chefs and interns. We will also be introducing a special style of service which blends the FOH team and the kitchen staff to meet and serve the customers on a regular basis. Guests will also be coming to the kitchen to see how their food is being prepared and this will be the approach on how we would like to be with our guests because dining is most than just cooking and serving dishes.

As this is not your average restaurant that takes place in a limited time frame, we also expect our operations to be quite different from the norm. Here, you will work fast paced and be taught and be involved in various technical preparations of our contemporary dishes, from the initial preparations to the finishing garnishes in a condensed time frame. You will be assigned and be expected to work side-by-side quite closely with your leader chefs; therefore an emphasis on being the supportive team member will be stressed throughout the event. You will have a chance to work with various ingredients, common and rare ones, participate in looking after our own crops, and take your various skills to the practical test. You being the ideal candidate will have the relevant semi-professional experience in the kitchen, from either the prep cook or the line cook in a fine dining setting for more than three years and have been educated, speak fluent English and is at least 22 years old. You are familiar with both the industry’s best practices and food safety knowledge and standards and you have travelled and worked at professional kitchens abroad for at least one year. Restaurant Manager Job Description
We are doing a pop-up tasting event at our studio. This managerial position will last up to 4 months with the potential of being possibly more. As this is not your typical restaurant, there are many areas which will require considerable learning and upgrading and improvisation of skills you may not normally experience. You will spend a significant amount of time, developing with the chef-de-cuisine the meticulous details for the service manuals, and based on that manual, you will execute, recruit, train, and evaluate the performance of the service team members and continuously monitor the overall working attitude and performance, motivate and strive for the best service possible during this period. You will also be expected to participate and carry out tasks related to marketing. You are passionate, work well together with both the service and kitchen staff, and make daily decisions that involve time management, uphold product quality, cleanliness, and service standards. You will go above and beyond and do all that is necessary to ensure a smooth, uninterrupted opening for our studio. Four major areas you will be involved in are sales forecast, strategic planning to increase the sales and profit margin, staff motivation and management, and help organize events to increase public exposure. 超越食物本身

過往我並沒有養成寫旅行日記的習慣,心想著也許沒有這個必要,未來我總還是會踏上新的旅程,新的記憶將會佔據我的腦海,或者是那些細節我根本不在乎。 但是近期,也許是年過了三十五,某種程度上,一些小事情能提供給我一個新的視角觀感:我想要捕捉住那個特定時刻的枝微末節,那些可能對別人來說是微不足道,但是對我卻意義重大的細節。
現在我越來越感受到,時間是一條痛苦、倏然而逝的單向之路,那些你未好好珍惜或記得的片段將會永遠消失、不復存在。即便是世界上最強大最富有的人,也無法在時間不停消逝的道路上發出任何抗議。 我一直很享受獨自坐在咖啡店裡的感覺。它提供了一個最棒的視野讓我能夠自在的觀察身邊所有人事物的日常瑣事。
座位對面,咖啡師帶著淡淡微笑著,親切的道了聲歡迎光臨,這天忙碌的早晨即將結束。
此時有位看來五十多歲的男士茫然地踏進店裡,他專注的看著牆面上的菜單,好幾次咖啡師對這位戴著帽子的先生打招呼,但他都沒有回應。咖啡師悄悄地離開了收銀台,手握著菜單迎向他,帶著閃閃發光的微笑和溫暖的鞠躬。空氣中似乎散發著芳香—像是薰衣草和洋甘菊的氣味飄然而至,只有用心領神會才聞的到。這位外國紳士最後做好選擇,走近櫃檯,點了他想要的,儘管雙方無法用語言溝通,藉著簡單的點頭和有意義的手勢​​,一杯超越國界、語言、文化障礙的咖啡配方,已在咖啡機上用心的被製成。 咖啡師感受到成功服務顧客的喜悅,這位男士同時感到咖啡香外,還附帶了咖啡師的好客溫暖與熱情。咖啡,飲料和食物—它們在地理上和文化上擁有不同的定義,卻能夠將我們融合為同一章節。

Food of Transcendence

I do not have the habit of keeping a diary of my travels. It was not necessary perhaps it was due to the fact there are always travels in the future that could keep my mind occupied or the ignorant fact that I simply did not care. Although as of late, and perhaps well into my mid thirties, things somehow are lending a new angle of perspective and I feel the urge to capture a small piece of detail at a particular moment that may seem trivial to other people's eyes, but is of significance to me. Because I am growing wary of the fact that the reality of time is a painful one way road that plunges forward without remorse and that any moment not treasured, remembered, or immortalized is lost forever; even the most powerful and the wealthy in the world are unable to utter a sound of protest in this matter. I have always favored the experience of sitting alone in the coffee shop. It offers the best unobstructed view for people watching and picking up details that may be exceptions to day-to-day occurrences. Across from where I was sitting, the barista gently warmed her welcome at the till. The morning rush is just winding down. An oblivious customer of perhaps in his fifties entered the cafe shop and had his attention firmly fixated on the menu above the walls. After a few unsuccessful salutations to the gentleman with the hat, the barista quietly exited the till and greeted the foreign gentleman with the menu instead. With her scintillating smiles and heartwarming bows, the air exuberanted an aromatic scent- almost lavender and chamomile- that is only smelled in the mind's eyes. Having made his choice, the foreign gentleman approached the counter and ordered his wishes. Despite the difficulties of not being able to communicate in each other's language, a few simple nods and meaningful gestures, and the universal coffee recipe that transcends the barriers of boundaries, languages, and cultures is well on its way of being made. The barista felt accomplished and the gentleman felt warmed, both by the coffee and the welcoming hospitality of the barista. Coffee, drinks, and food- they define us geographically and culturally yet put us back together on the same page.

Feuille不是一家餐廳

“Feuille”不是餐廳,至少在概念方面並不是傳統意義上的。
我們沒有固定的營業時間,工作範疇在服務和菜單的研發之間相互分配。
我們相信,餐飲不應該僅僅是為了滿足我們的胃口,也應該是其他感官整體身臨其境的體驗;餐飲應該像娛樂一樣有趣,類似於觀看電影或音樂一邊享受視覺饗宴,味蕾也同時在享受爆米花、一杯泡芙或令人充滿罪惡的冰淇淋所帶來的感官刺激。

“Feuille“不是餐廳。
它沒有一個金碧輝煌的門面,或者藝術家精雕細琢的藝術品擺設,也沒有通常高端餐廳所擁有的高品質服務。
它如平原一般質樸不加修飾,如鄉村一般簡約。
使它獨特的是,我們面對服務和烹飪不帶任何偏見及預想抱負。
我們堅信,細節是持續改進和學習服務標準的最基本要求。
我們進一步認為,詳細了解客人的唯一方法是將服務人員與少數客人配對,因為每張餐桌上的用餐客人不同,它擁有自己特定的用餐習慣,只有專門為他/她精心服務的服務人員才能真正了解並滿足每一位客人的需求。
實際上的感覺是Feuille有七個小的用餐包廂並各自擁有專屬的服務人員,而不是一個僅僅有七張桌子的料理工作室。然而,想要實踐這個理想必須擁有更多志趣相同的專業人員一同攜手努力達成。

"Feuille" is not a restaurant, at least not conceptually and certainly not in the conventional sense. We do not have fixed business hours and our operations divide between the service and the research and development for the menu. It is our belief that dining should not be only about satisfying our appetite, but also as an overall immersive experience for other sensory organs; dining should be as fun as entertainment analogous to watching a film or a musical while enjoying the conceptual symmetry of indulging other senses in popcorns, a glass of bubbly, or a rich and decadent ice cream.
We have enjoyed being outdoors, learning, growing and foraging these plants and it is where we draw the inspirations for our dishes and it is also our objective to eventually grow our own vegetables in the vegetable garden. We strive to minimize our impact on the environment by reducing food wastage and using as many locally sourced ingredients as possible to minimize our carbon foodprints.
Feuille isn't all just about researching and developing the dishes, but how to choreograph the overall dining experience weights heavily on our minds as well. It has never been simply about filling up the glasses to the correct level when empty or delivering the plates to the guests at the precise moment or anticipating the guests' needs before they make a request, but rather how to bridge and convey those silent stories, secrets, and the emotions behind each dish from the kitchen to the guests.
Feuille is not a restautant. It does not have a glamourous facade or artist- accentuated decors nor does it have gold or silver service ware a high end restaurant usually posseses. It is plain, rustic, and minimalistic. What makes it unique though is that we have no prejudice or pretensions when it comes to service and cooking. We strongly believe that details are the fundamental requirement to a beginning of a continously refined and learning service standards. We further believe the only way to look after our guests in detail is to pair the service staff with only a small number of guests because each table is different; it has its own niche and unique habitat and that only an observant and meticulous server dedicated solely to his/her guests of that table can really understand and cater to each guest's needs. Instead of feuille being a culinay studio with seven tables, it is in fact seven little small dining rooms with their very own butlers and stewardesses.
The practicum of this ideology takes more than the like-minded group of professionals to pull it off. Devotions, committement, and perserverance are the very minimal requirements any potential candidate should undoubtedly possess as part of their personal traits.

什麼才是適當的價格

當我決定成立feuille料理實驗室時,純粹是帶著對烹飪的熱情,想分享給人們有別於平日所吃的食物與料理研發上的各種可能性。
初期幸運的遇到了一些有相同興趣的新朋友,無論是與廚藝上還是其他有助於提供良好的用餐氛圍的朋友們。為了讓這種熱情不間斷,feuille提供了廚房與空間,讓有同樣想法的朋友能聚在一起,從談論基本概念、到旅行體驗、季節的變化、或是欣賞藝術品,所有這些看似毫無相關的想法都塑造了feuille料理的基礎。
事實上,feuille從來都不是以一間餐廳為目的而成立的,我們擁有無限的可能性去塑造其他餐廳無法呈現的特色。 所有的廚師都是自己想要來到這,並被某種無法言喻的共同目標集合起來,他們渴望學習和付出,讓我更加有責任提供這種養成氣氛,同時感謝大家的貢獻。我們是一個開放式廚房,提供所有的客人能夠看到廚師們如何工作、料理食材。與大部分餐廳中閉門進行的廚房不同,我努力使這一切透明化,盡可能讓大家參與我的料理。

Pricing it right.

When I started feuille food lab, it was purely out of passion to cook, to share, and to bring about the different possibilities of the food we eat out of our daily lives. Somewhere along the way, I was quite privileged to have met some new friends with the same interests—whether it was directly related to the cuisine or some others that were necessary to help provide a great dining atmosphere. And to continuously share that passion, feuille provided a physical compound for the same minded to engage in anything that could be about food, from talking about a rudimentary idea to travelling experiences to noticing seasonal changes to admiring a piece of artwork. All of that seemingly unrelated ideas shape the very foundation of feuille’s cuisine. And the fact that feuille food lab was never a restaurant to start out with, I have limitless possibilities to shape the cuisines that other establishments may not have the privilege to. 
All the staff members are here on their own terms and are united by the same unspoken objective; they wish to learn and to contribute. And it is my responsibility to provide that nurturing environment and at the same time reward and thank them for their contributions. At feuille food lab, we have an open kitchen, which is readily available for all the diners to see. Unlike other establishments, many operations go on behind closed doors. Here at feuille food lab, I strive to be as transparent as possible to the diners and engage as many different disciplines as my cuisines would allow. 
As feuille’s cuisine spans several disciplines, and feuille’s menu changes and grows at every appointed service hour, and my desire to expose the diners to as many new ideas and dishes as possible, the research goes on behind each dish inevitably lengthens and operates out of a bigger budget. In order for diners to try up to a certain number of dishes as a whole and to my heart’s content, I would need more staff members to proportionally offset the growing number of kitchen tasks. When I start out each menu, I never look at the price tag as a limit and try to design dishes to meet that budget, but rather, I design it so that at least there would be enough budget as a priority to reward and thank the staff members. As feuille food lab is not a restaurant, and its mission is centered around providing as much as possible to the diners in a limited number of seating available without any compromise, we do fall short of our primary proceeds to cover the costs incurred. Nevertheless, feuille in my mind is meant as a non-profit establishment, if in the future, we do open up more seating reservations, any additional proceeds we managed would go to charity organizations. 
At first, perhaps a look at feuille’s dinner price may come as a surprise to some, and the fact that no menu is confirmed at the time of scheduling reservations, some potential diners may find themselves flinching and hesitant towards feuille’s cuisines. But it was never about making profit at feuille, the amount of proceeds the diners reward us with simply goes back into serving them. Again, I want to thank the diners who have booked a seating with us in the near future and giving us a chance to perform for you. We would be the most humbled to be of service to you, and thank you again, my dear patrons.
